 The Satsumaage is sometimes used as an ingredients for Japanese hotchpotch named the Oden. The Satsumaage is generally called the Tukeage in the Kagoshima Prefecture. But it sometimes hear the Tutkyage in the Oosumi peninsula. I think that both of them is called so because the words which means soak (tukeru) and fry (ageru) ware combineed.
 In general the Satsumaage is made from more than 2 kinds of the ground fish. There are many kind of Satsumaage contain the burdock, the carrot, the sausage and so on. I love the green soybeans Satsumaage (EdamameTen) and the sweet potato Satsumaage (ImoTen) in it. Recently the cartilage Satsumaage (NankotsuTen) was born and start to become popular. I favorite the simple NankotuTen without a spice which assert strongly as the seven-spice pepper the most. I heard long ago the Satsumaage was made from fish which were fished in the day at a fish market beside the Kagoshima port, but I don't know which is also made now. At the maeket the fisherman threw them into the bamboo basket in front of thier shop while fried them. The visitor aat in the mood...
 The best Satsumaage is the newly fried! The Satsumaage sold at a souvenir shop and a supermarket become tough, fade, smell a refrigerator and is not tasty because they past long time after frying.
