**MatsumotoHanzucha**
 Hanzucha is a kind of pan-fried green tea. It is made using Hanzu. In short, Hanzu is a water jar. At first, Hanzu is leaned aslant and it puts on a hearth. Second, tea leaves are put in it, and it is parched stirring with a wooden branch. There is a rubbed process and twisted process on the way. Craftsman have to judge adjustment of how to rub, quantity of the tea leaves to supply, heat degree, time to parch and so on by experience. From the first, it was a domestic taste in Matsumoto.
 Because time and effort was taken very much, the production farmhouse was lost recently. But Hanzucha can be specially made from exertion of the production farmhouses in Chiran. We are truly thankful to them.
 Making Hanzucha begins from selection of tea leaves first. The leaf which chose only the sprout with the suitable sufficient quality to Hanzucha was harvested with the hand knob, and they are carefully processed over many hours. Because processing is very difficult and there are few suitable tea leaves, the stable supply which lets every year pass cannot be performed probably. Once it sells out, a possibility that it must wait for next year is high. Now, Hanzucha is offered only here in the world.
 It tastes peculiar, so it is divided into those who become crazy and those who hate it. Because it is pan-fried green tea, savory scent is felt first of all. By the drunk impression, savory scent like the scorched rice of boiled rice is shown in the front side, and the back has a fermentation smell. This is a dainty in the world of tea. It is tea suitable to advanced person.
 Hanzucha was revitalized by courtesy of the persons concerned. We name it "MatsumotoHanzucha" with our love for the lost town "Matsumotocho" which has disappeared by the municipal merger . We hope the name of Matsumoto town revival with the succession of the traditional culture.
